Ingredients

• eggs — 4 boiled + 1 raw for coating
• potatoes — 3, boiled
• onion, green chilli, coriander — chopped
• biscuit or bread crumbs — 1 cup
• garam masala and salt
• oil for frying — 200 ml

Method

1. Halve the boiled eggs lengthwise.
2. Mash the potato with onion, chilli, coriander and spices.
3. Wrap each egg half in potato, dip in beaten egg and roll in crumbs.
4. Fry on medium heat until golden.
