Ingredients

• fuchka shells — 40
• white peas (dabli) — 1 cup, boiled
• potatoes — 2, boiled
• tamarind — 50 g
• onion, green chilli, coriander — chopped
• roasted cumin and chilli powder, black salt — to taste
• boiled egg — 1 (to grate on top)

Method

1. Soak the tamarind in hot water, strain and season with salt, sugar and cumin for the sour water.
2. Mash the potatoes and peas with onion, chilli, coriander and spices.
3. Crack a small hole in each shell and fill it.
4. Grate egg over the top, dip in the sour water and eat immediately.
