Ingredients

• plain flour — 250 g
• oil for the dough — 3 tbsp
• potatoes — 4, diced small
• peanuts or peas — ½ cup
• panch phoron, turmeric, chilli, cumin — to taste
• oil for frying — 300 ml

Method

1. Rub oil and salt into the flour, add water a little at a time for a stiff dough; rest 20 minutes.
2. Temper panch phoron, add the potato, peanuts and spices, cook through and cool.
3. Roll small discs, halve them, fold into cones, fill and seal.
4. Fry slowly in medium-low oil until golden.
